Spread a generous amount of mayo onto one side of each slice of bread.
On two slices of bread, lay out ½ of the sliced brie.
Place the piece of bread with brie and a piece of bread without the brie into the heated skillet. Cover and let cook for about 2-3 minutes or until the brie is melted and the bread is golden brown.
Transfer to a cutting board and layer ½ of the apples onto the brie, followed by 2 slices of prosciutto, and ½ cup arugula.
Drizzle ½ tbsp hot honey over the arugula and top with the plain toasted bread.
Repeat with the second sandwich. Slice in half and serve immediately.
Notes
Use regular honey instead of hot honey for no spice.
Omit the prosciutto for a meat-free version.
Use gluten-free bread for a celiac-friendly version
Try using goat cheese or another soft cheese in place of the brie for a different version.
