Pink Lady® Apple Coconut Energy Bites

Ingredients

  • 1/3 cup grated Pink Lady® apple (1 medium sized apple)
  • 1/3 cup almond butter
  • 1 cup shredded unsweetened coconut, plus more for coating
  • 2 tablespoons maple syrup
  • 1 teaspoon vanilla extract
  • 1 tablespoon chia seeds, plus more for coating
  • 1/2 teaspoon ground cinnamon
  • 1/8 teaspoon ground nutmeg
  • Pinch of sea salt

Directions

  1. Squeeze the juice out of grated apple until fairly dry to the touch.
  2. Combine the apple with the remaining ingredients and mix well.
  3. Roll about 2 tablespoons at a time into balls with your hands. Roll the balls in additional coconut or chia seeds to coat, if desired.
  4. Refrigerate for 30 minutes to firm up before eating.
  5. Store in an airtight container in the refrigerator for up to a week or in the freezer for up to 2 months.
