Roughly chop two Pink Lady® apples and add them to the blender cup with the banana, acai, blueberries and coconut yoghurt. Blend until combined and smooth.
To melt the dark chocolate, break it into small pieces and add to a microwavable bowl with ½ teaspoon of coconut oil. Melt in the microwave at 600w for 1-2 minutes.
Spoon the Pink Lady® apple smoothie into two bowls. Top with slices of one Pink Lady® apple, some granola, a spoonful of coconut yogurt, a few blueberries and a sprinkling of cacao nibs. Finish with a drizzle of melted dark chocolate
