Add the diced apple to a small sauce pan with 2 tablespoons of butter, 1/2 teaspoon of the cinnamon, maple syrup and water. Bring to a simmer and cook for 15-20 minutes, until the apples soften and the liquid thickens slightly.
Melt the remaining 2 tablespoons of butter and set aside.
Combine the sugar and remaining 1 1/2 teaspoons of cinnamon in a shallow bowl or plate and set aside.
Place about 2 tablespoons of apple filling down the middle of each tortilla and roll tightly. Brush the roll-ups with melted butter and roll in the cinnamon sugar to coat.
Place the roll-ups in an air fryer and cook at 350°F for 12-15 minutes, until brown and crispy.
