Pink Lady® Air Fryer Apple Roll-ups

Ingredients

  • 2 Pink Lady® apples, peeled, cored and diced
  • 4 tablespoons unsalted butter, divided
  • 1/4 cup maples syrup
  • 1/4 cup water
  • 2 teaspoon ground cinnamon, divided
  • 1/2 cup sugar
  • 6 (6 inch) flour tortillas

Directions

  1. Add the diced apple to a small sauce pan with 2 tablespoons of butter, 1/2 teaspoon of the cinnamon, maple syrup and water. Bring to a simmer and cook for 15-20 minutes, until the apples soften and the liquid thickens slightly.
  2. Melt the remaining 2 tablespoons of butter and set aside.
  3. Combine the sugar and remaining 1 1/2 teaspoons of cinnamon in a shallow bowl or plate and set aside.
  4. Place about 2 tablespoons of apple filling down the middle of each tortilla and roll tightly. Brush the roll-ups with melted butter and roll in the cinnamon sugar to coat.
  5. Place the roll-ups in an air fryer and cook at 350°F for 12-15 minutes, until brown and crispy.
  6. Remove and serve warm.
