1 tsp apple pie spice ● 1 vanilla bean pod, beans scraped
½ cup pure maple syrup, divided
1/2 -1 cup water
Sparkling water, to serve
Cinnamon sugar, to rim your glass
Preheat the oven to 425 degrees Fahrenheit and line a baking sheet with parchment paper.
Add the apples, apple pie spice, vanilla beans, and ¼ cup of the maple syrup to the lined baking sheet. Toss until combined, then roast for 30-35 minutes until the apples are absolutely tender. Let cool completely.
Add the cooled apples to a high-speed blender along with ½ cup water and the remaining ¼ cup maple syrup. Blend until completely smooth, scraping the sides, and adding more water if needed until a smooth consistency is reached.
To make the mocktail, rim your serving glasses with cinnamon sugar if desired and fill them with ice. Add desired amount of the apple + vanilla mixture to the bottom of the glass, then top with sparkling water. Mix, serve, and enjoy!
