Roasted Pink Lady® Apple + Vanilla Maple Mocktail



  • 3 Pink Lady® Apples, peeled, cored, and diced
  • 1 tsp apple pie spice ● 1 vanilla bean pod, beans scraped
  • ½ cup pure maple syrup, divided
  • 1/2 -1 cup water
  • Sparkling water, to serve
  • Cinnamon sugar, to rim your glass


  1. Preheat the oven to 425 degrees Fahrenheit and line a baking sheet with parchment paper.
  2. Add the apples, apple pie spice, vanilla beans, and ¼ cup of the maple syrup to the lined baking sheet. Toss until combined, then roast for 30-35 minutes until the apples are absolutely tender. Let cool completely.
  3. Add the cooled apples to a high-speed blender along with ½ cup water and the remaining ¼ cup maple syrup. Blend until completely smooth, scraping the sides, and adding more water if needed until a smooth consistency is reached.
  4. To make the mocktail, rim your serving glasses with cinnamon sugar if desired and fill them with ice. Add desired amount of the apple + vanilla mixture to the bottom of the glass, then top with sparkling water. Mix, serve, and enjoy!
